John Piconi olive oil is a blend of first cold pressed California olives. The varieties used are Arbequina, Sevillano, Frantoio and Manzanillo. Extensive tasting trials were conducted so that the unique and best qualities of each variety are molded in to an aromatic, rich and fruity olive oil that is not attainable with single variety olive oils. It is my belief that a more complete sensory experience is achieved in this process, similar to blending different grape varieties to produce great wine.
