All of our pastas are produced from wheat grown at family-owned farms in the heart of Marche, Italy.
Our durum wheat semolina is grown according to USDA Organic standards and begins with the selection of the finest durum wheat flour and fresh Apennine Mountain spring water.
Bronze moulds or “dies” are used to create the pasta shapes, giving it a rough, porous texture that holds sauces exceptionally well. Our pasta is then dried at a low heat for 24 to 40 hours, enhancing the flavor to pure perfection.
Semolina flour has a high protein content, a low glycemic index, naturally occurring beta carotene, and contains large amounts of fiber. It is also high in natural minerals such as iron, magnesium, phosphorus and B vitamins.
